Hello Fabulistas! I love Memorial Day Weekend! It marks the beginning of summer and it’s the perfect time for friends and family to get together and hang out! The long weekend is the perfect time to hang out with loved ones, eat delicious food, and make memories. When I have my family over, I like to prepare small bites everyone to munch on. When the pieces are small it’s easy for guests to talk and chat at the same time.
These recipes may not be as healthy as others I normally cover in Simplifying Delicious, but here’s to treating yourself! Here’s what I’m making this weekend:
Creamy Potato Salad
Potato salad is the perfect summer dish! It’s hearty but not HOT, so you can cool down a bit in this summer heat. It’s good for all day events because you can leave it out without worrying about it going bad. Plus, it’s easy to make. You know how I love things easy!

Deviled Eggs are another appetizer on my menu this weekend. This is another long lasting dish that can sit out for a while. There are many tasty versions but I like to stick with classic deviled eggs. They’re always a hit at my house!

Pineapple Mango Salsa
Salsa is always a party favorite. Fresh fruits are readily available when the weather gets warmer and they’re refreshing, too. This Pineapple Mango Salsa adds an interesting twist to a classic dish. It’s also quick to make!
